This is an absolutely delicious local speciality and raw superfood. Anyone that has even gathered with me on retreat, classes, or courses will remember this emerald green salad dressing that they simply could not get enough of - it is THIS delicious oil with a splash of raw apple cider vinegar!
 
I eat alot of raw native seasonal seeds and nuts as part of my 'diet', and work with seed cycling too for menstrual, hormone and womb health, so incorporating pumpkin seeds and pumpkin seed oil has been part of how I nourish myself each day for twenty years now. However, this raw organic cold pressed pumpkin seed oil was the first thing I fell in love with when I moved to the Alps, and is the one thing I would truly miss in my pantry if I ever left! I bring bottles of this with me when I travel and people simply cannot get enough of it. So I am offering a little here, for those of you who need a restock *because hormone health/womb health/seed cycling and conscious nourishment are all part of the spring theme of new starts, new habits, breaking old patterns and new you!*
 
Apart from salads, I drizzle this over pretty much all of my soups, broths, ramens and one pot wonders before serving, it works with everything! It's great drizzled over a simple pasta with a little fresh garlic cut into it, and equally delicious baked into breads, or eaten from a little bowl with fresh bread dunked it. It's pure green gold.
