Chanterelles have got to be one of the most beloved culinary mushrooms on the planet, however I am quite sure most are only familiar with them in savoury dishes. Fermentation is my go-to preservation technique and I have lacto-fermented chanterelles in various ways over the years, however having observed how their texture remained firm, I was curious about how they would carry a sweet flavour. I was determined to make this work as I loved the idea of these tiny whole chanterelles that could be eaten as a sweet treat, and so I began.
They were lactofermented in their own juice for a week, infused in birch syrup for four days, then dehydrated for 12 hours until they reached a chewy toffee consistency. They are salted caramel heaven and as much as I love to have one on its own as a delicious treat, I plan to also make raw chocolates to sprinkle them over, and will serve them during the Earth Element day of my Elements of BEing retreat in Ireland this October...half dipped in medicinal raw chocolate, as I want participants to be able to see the chanterelle that they are about to eat.
This comes to you in a beautiful locally made recycled glass apothecary jar, complete with our wild botanical Celtic Wheel of the Year mandala art debossed in a wax seal made with handgathered finely ground pyrite, selenite, and biotite crystals. Each vessel is sealed with beeswax, adorned with a mini posey of wild lunar botanicals, and finished a hand written plant fiber paper label embossed with our Celtic Wheel of the Year mandala art. The label is lovingly held in place with a beautiful plant fiber cordage made from mugwort and rose.
As with all offerings, every single ingredient has been hand gathered, dried and prepared by me personally, ensuring sustainable, biodynamic and ceremonious harvesting of plant medicines, highest quality organic ingredients, and energetic integrity from start to finish. All ingredients have been air dried so as to ensure raw quality and preseve the highest nutritional density possible.
